Try this yummy dairy free carbonara. It’s great for all our pixies with allergies. It’s so easy and we pixies love it! (Even Queen Pearl can cook it, and she’s a terrible cook … but don’t tell her!)
Always check it is safe for you with a grown-up.
Ingredients:
1 onion
1 clove of garlic
bacon
chicken breast or thigh fillets
frozen mixed vegetables or fresh vegetables of your choice – We added fresh celery and mushrooms to the frozen ones.
soy milk
Method:
- Spray the pan with oil so it does not stick. Turn it on to medium heat.
- Chop the onion and garlic and add to the pan. Add celery if you like.
- Chop the bacon and chicken into little pieces and add to the pan.
- Don’t forget to stir it!
- Wait until the chicken is almost cooked, then add your vegetables.
- Pour in the milk until there is enough for your liking.
- Cook until everything is well and truly cooked through. You might like to turn the pan down a bit to simmer.
- Don’t forget to keep stirring it!
- Serve with pasta, rice or garlic bread.
